Abstract:Objective To learn the contents of mineral elements calcium(Ca),phosphorus(P),potassium(K),sodium(Na),magnesium(Mg),iron(Fe),zinc(Zn),copper(Cu)and manganese(Mn)in meat and viscera of livestock and poultry(pigs,cattle,sheep,chickens and ducks). Methods The contents of Ca,P,K,Na,Mg,Fe,Zn,Cu and Mn in the food samples bought from markets were measured according to the national food safety standard(GB 5009.268—2016). The correlations between mineral elements were analyzed.Results The highest levels of P and Zn were found in pig liver,which were(502.54±4.20)and(12.22±0.81)mg/100 g. The highest levels of K and Mg were found in beef,which were(631.20±5.15)and(58.72±1.51)mg/100 g. The highest level of Ca was found in omasum,which was(61.88±2.32)mg/100 g. The highest level of Na was found in eggs,which was(377.37±2.16)mg/100 g. The highest level of Fe was found in duck blood,which was(29.82±0.84)mg/100 g. The highest level of Cu was found in sheep liver,which was(8.51±0.12)mg/100 g. The highest level of Mn was found in duck liver,which was(0.53±0.02)mg/100 g. There was a significant correlation between Mg and K in the meat and viscera of the 5 kinds of livestock and poultry(r=0.666, 0.996,0.903,0.817,0.972,all P<0.05).Conclusion Meat and viscera of livestock and poultry contain abundant essential mineral elements,which can be reference for healthy diets.
